Restaurant and café cleaning: front of house done properly

Restaurant cleaning splits into two jobs: the kitchen, which is about grease and food safety, and front of house, which is about what diners see, touch and smell. This page is about front of house. Done properly, it is a scheduled clean of dining floors, seating, tables, toilets and the entrance, timed so the room is ready before the first cover and never cleaned while people are eating.

What diners actually notice

Guests rarely comment on a clean room, but they notice every lapse. The usual culprits are crumbs trodden into the edges of the floor, sticky menus and table edges, high chairs with food dried into the straps, smeared glass on the front door and a toilet that has not been checked since lunch. None of these are difficult, which is exactly why they need to be written into a routine rather than left to whoever has a spare minute at close.

The front-of-house checklist

A café or restaurant specification normally includes the following, split into what happens every visit and what happens on a longer cycle.

  • Dining floors swept and mopped to the edges, under banquettes and behind the host stand
  • Tables, chair backs, legs and seat edges wiped, including the undersides hands grip
  • High chairs and booster seats cleaned in full, straps and trays included
  • Toilets descaled and sanitised, bins emptied and consumables restocked
  • Entrance doors, windows at hand height and mirrors cleaned so they do not streak under lighting
  • Counters, card machines, menu holders and condiment stations wiped down
  • Periodic: upholstered seating, skirting, light fittings and vents on a planned interval

Working around service

The clean has to fit between services, not across them. Breakfast cafés usually want a clean after the afternoon close; evening restaurants often prefer an early-morning visit before prep begins. Split-shift sites sometimes add a short mid-afternoon toilet and floor check. We plan the rota around your opening hours and can work out of hours and at weekends.

Floors: the biggest single difference

Dining floors take spilt drinks, dropped food and grease carried out from the kitchen on shoes. Mopping with a dirty bucket spreads a thin greasy layer that makes the floor look dull and feel slippery. The fix is the right dilution of a degreasing floor cleaner, clean water changed often, and a periodic machine scrub on hard floors so the grout and textured tiles get cleaned rather than just wetted.

Upholstery, carpets and soft furnishings

Fabric banquettes and carpeted areas hold smells long after the surface looks fine. A periodic hot-water extraction clean lifts food and drink from the fibres instead of perfuming over it. It is best booked on a closed day so the fabric dries fully before service. Our carpet cleaning is the same process used on commercial carpet elsewhere.

Choosing a daily, weekly or mixed rota

Small cafés with one sitting often manage with a thorough clean a few times a week and a quick daily toilet and floor check by staff. Full-service restaurants usually need front of house cleaned every trading day because the room turns over several times. A mixed rota, with a light daily clean and a longer weekly session for skirting, seating and glass, is often the best value. We would rather set the frequency from how busy you are than sell a fixed package.

We can. The kitchen is specified separately because it needs degreasing chemistry and food-safe methods, and it is often on a different rota.
